Magic in the Kitchen: Spaghetti

Busy moms have hectic days and little time to spend whipping up a storm in the kitchen. But you needn't compromise the quality of your food just to make ends meet! Here are 3 very quick and tasty spaghetti recipes that vary in simplicity to ensure that your family gets a nutritious and filling meal. 

Tricolor Spaghetti

- 400 g of spaghetti
- 400 g of ripe tomatoes
- 150 g of fresh mozzarella cheese
- Grated parmesan cheese 
- About 7 dessert spoons of virgin olive oil
- A few leaves of fresh basil
- Oregano
- Salt
- Pepper


• Pour the oil into a serving dish.
• Wash, dry and chop the tomatoes, then add to the oil.
• Add a good pinch of oregano, a few chopped basil leaves, a pinch of salt and pepper, and a   few spoons of grated parmesan.
• Leave the mixture in a cool place for a couple of hours.
• Put the water on for the spaghetti and when it is boiling add the pasta.
• When the spaghetti is al dente, drain it and pour it into the serving dish.
• Add the diced mozzarella and then stir thoroughly so that the heat from the pasta melts the mozzarella.
• Serve immediately.

Spaghetti with Curry

- 400 g of spaghetti
- 1/4 of a liter of fresh single cream
- 1 dessert spoon of curry powder
- 1/2 a packet of saffron
- Virgin olive oil
- Slat


•Put the water on for the spaghetti and when it boils add the salt and then the pasta.
• Meanwhile heat some oil in a saucepan, add the curry, the saffron, and after a couple of         minutes the cream.
• Stir with a wooden spoon and allow to simmer for a few minutes.
• Put a heat diffuser under the pan if possible.
• When the pasta is al dente, drain it and add the curry sauce.
• Stir thoroughly and then serve. 

Spaghetti with Mushrooms and Peppers 

- 400 g of spaghetti 
- 1 small onion
- 1 clove garlic
- 8 dessert spoons of extra virgin olive oil
- 30 g of dried mushrooms
- 1 medium size green pepper
- 200 g of tinned tomatoes 
- 6 basil leaves
- Salt
- Pepper


• Peel and finely chop the onion.
• Peel and finely chop the garlic.
• Put the oil in a saucepan, heat it and add the onion and garlic. Sauté and stir with a wooden    spoon.
• Add the mushrooms, which should have been previously soaked and drained.
• Wash, de-seed and roughly chop the pepper and add it to the mushrooms.
• Add a little warm water and 3 finely chopped basil leaves.
• Allow to simmer over a moderate heat for about 20 minutes, stir from time to time.
• Add the remaining whole basil leaves and remove the pan from the heat.
• Now put a pan of water on to heat for the spaghetti.
• When the water begins to boil, add the salt and cook the spaghetti until al dente.
• Drain and pour into a serving dish.
• Add the sauce and season with pepper.
